Swedish Toast


Something I love to make at Christmastime - similar to Biscotti.

1 C. butter
2 C. sugar
2 eggs
3-1/2 C. flour
2 tsp. baking powder
1/2 tsp. salt
1 C. sour cream
1 C. slivered almonds

Mix like cake.  Bake in 9 x 13 inch pan at 350 degrees for 40-50 minutes.  When cool, cut into 3 strips the length of the pan.  Slice each strip 1/4" to 1/2" thick.  Lay on foil on cookie sheet.  Dry in slow oever, 275 degrees, until brown.  Turn occasionally.  Keep in covered container.

Olive Garden Toscano Soup

(makes about 3 servings)

2-3/4 C. chicken broth
1/4 C. heavy cream
1 medium russet potato
2 C. chopped kale
1/2 lb. spicy Italian sausage
1/4 tsp. salt
1/4 tsp. crushed red pepper flakes
-Combine broth and cream in saucepan over medium heat.
-Slice unpeeled potato into 1/4" slices, quarter and add to soup.
-Add chopped kale.
-Grill sausage, cool, cut at an angle 1/2" thick and add to soup.
-Add spices & simmer 2 hours.  Stir occasionally.

Breakfast Burritos

Why didn't I do this sooner?   I've been scrambling up a dozen extra eggs when I make a Sunday breakfast, and then roll them into flour tortillas to make burritos.  I add whatever meat I might have leftover from breakfast - sometimes sausage, sometimes bacon, sometimes just cheese.  I wrap them all up individually and freeze them.  Just microwave for 60-90 seconds and voila!  They are just enough to take the edge off before heading off to work.

Fresh Salsa

This is the best recipe I've tried - doesn't last long around here!

1/4 C. chopped fresh cilantro
3 med. tomatoes, chopped
2-3 fresh jalapenos, chopped
1/2 med. onion, chopped
1 tsp. chopped garlic (or more to taste)
1 tsp. salt
2 tsp. vinegar
1/2 tsp. worcestershire
1/2 tsp. lemon or lime juice

Blueberry Zucchini Bread

3 eggs
2 C. sugar
3/4 C. oil
3 tsp. vanilla
2 C. unpeeled, coarsely grated zucchini

3 C. flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
1 C. blueberries

Beat eggs, add oil, sugar, vanilla and zucchini.
Add dry ingredients, blend well.  Carefully stir in the blueberries.  Bake in 2 well-greased and floured bread pans at 325 for 1 hour. (Or 5 mini loaf pans for approximately 45 minutes.)  Cool for 10 minutes, remove from pans and cool completely.  Freezes well.

Slow Cooker Egg Bake



32 oz. bag frozen hashbrowns
1 lb. Jimmy Dean sausage, browned
2 C. shredded cheese
(Green pepper, onion, etc. optional as desired)
12 eggs
1 C. milk


Layer hashbrowns, sausage & cheese in slow cooker.  Mix eggs & milk, pour over top.  Set slow-cooker on low over night, and turn to high for an hour or so in the morning.  Voila!  Breakfast.

Caprese Skewers


CAPRESE SKEWERS
A fabulous low-cal snack!

Grape or Cherry Tomatoes
Fresh Basil leaves
Fresh Mozzarella balls (cheat at home and use good mozzarella slices)

Place on toothpicks and enjoy!  For a nice hors d'oeuvre to bring to a party, drizzle with a little olive oil and balsamic vinegar, and sprinkle with salt & pepper.
